a few days ago i came across a recipe for zucchini weenies that looked quite interesting. the ingredient list was simple enough...zucchini, vegenaise, parma and basil. when i suddenly got a craving for a midnight snack, i decided it was time to put the recipe to the test.
the results were amazing....so good! after just a few minutes under the broiler my zucchini had a nice golden top with a slight crunch...perfect! i've been using reduced fat vegenaise lately with mixed feelings. for this recipe, it worked out great. i'm thinking the parma had a lot to do with that. i ended up using dried basil because i was too scared to go out and pick some from my garden...I GOT SOME CRAZY NIGHT TIME CRITTERS BACK THERE!
i love dishes that make party hosting easier without compromising on quality or taste. i can't wait to make this for my next get together and impress my friends.
zucchini weenies (original recipe posted at jaclyn's vegan yumminess)
- 1 medium zucchini cut into 1/4" slices
- 2 tbsps of vegenaise (i used reduced fat)
- 2 tbsps of parma
- 1.5 tsps of dried basil
preheat oven to broil. mix veganaise, parma and basil in a bowl. spread mixture evenly on top of zucchini slices. place slices on top of cookie sheet, or foil if using a toaster oven. broil for 2-3 minutes until golden brown. enjoy!
